The harvested olives are processed into oil within hours after harvest in our mill, where we use technologies that allow us to maximize the potential of the olive in each extraction stage.
The result is an oil with a green and intense fruity, characterized by the marked notes of tomato with its leaf, mediterranean herbs, thistle, nettle and white pepper. In the kitchen Zahara matches with cooked and raw vegetables, tomato Caprese, Sicilian orange salad, cereal and legumes soups, grilled meat and fish.

The olives are harvested by hand in a period from mid-September to the second half of October, depending on the degree of ripeness of each cultivar.
The olives collected are transformed into oil within a few hours in our oil mill.
