Olio Pop is a blend of native Sicilian cultivars, from the most representative such as Biancolilla and Cerasuola, to other less known ones, such as Moresca and Carolea. The olives are harvested in the second half of October, depending on the degree of ripeness of each cultivar. The harvested olives are transformed into oil within a few hours in our mill.

Flavor profile

The result is a light fruity oil, characterized by marked notes of almond, artichoke and cut grass. In the mouth it is fresh and round, with pleasant and harmonious bitterness and spiciness.

Pairings

In the kitchen it is suitable and versatile for every use, both raw and cooked. In particular on salads and cooked vegetables, soups, white meats and fish.
